This is a recipe of Molly Agnes Makhal aged 79 years, who is suffering from acute dementia. The article is an appreciation post of one of her recipes as she cannot recollect her culinary skills. Her innovative cookery skills are reflected through this simple and healthy dish which will be loved by all in every household.
Ingredients:
• 500gms Tiger prawns
• 500gms Capsicum
• 1 cup grated coconut
• 8 green chillies
• 2tbs mustard paste
• 4tbs mustard oil
• 2tbs honey
• Salt as per your taste
Method:
1. Saute the prawns in a frying pan with very little mustard oil for 2 min till it changes to orange.
2. Place grated Coconut and green chillies in a dry grinder and process for a few seconds to form a paste (do not add water).
3. Finely slice the capsicum as shown in the picture. Place the sliced capsicum, ground coconut and green chilli paste, mustard paste and raw mustard oil in a pan and mix thoroughly.
4. Place this pan on medium heat. Stir gently to mix and cook until the capsicum is half cooked.
5. Add the sauteed prawns, honey and salt.
6. Stir fry till until heated through and mixed well. Ensure the prawns remain intact with the tail and head.
7. Transfer it to a serving dish. Serve garnished with fresh grated coconut.
